Don’t let the name fool you. . these aren’t your granny’s sloppy joe’s! These are Sloppy Joe’s in a biscuit!! What could be better? Sometimes, I love eating food where you don’t need a fork and a knife! I’m ghetto- fabulous like that.
Recently, when I was in Dallas, my friend’s dear sister (Hye-Jin Nam) hosted a get-together and made a TON of delicious food. There were like 50 kids there running around, the usual chaos and fighting over balloons (:P), crying and wait, I don’t think any blood was shed. . but damn, it didn’t matter. There was so much yummy food. Hye-Jin made these Sloppy Joe biscuits. . which were divine! I ate two and would have went for a 3rd but I figured I should let others eat some too.
These are great for apps or snacks, for a party or get-together when you have a lot of people over and great for the kids too. Mine mostly ate the sloppy joe beef. . I had some left over and they polished off all the meat & veggies while these were in the oven.
The recipe is from Pillsbury (ain’t nothing wrong with that) plus Hye-Jin shared with me another recipe here to make the sloppy joe ground beef mixture a little more flavorful. I added a few more ingredients and adjusted some things so I hope you give this one a try and enjoy! I might try these with croissant rolls next time! Why not?
Sloppy Joe Biscuit Cups!
(you can adjust the measurements how you like; I added a lot of veggies into my mixture!)
- 1 lb lean ground beef
- 1 cup chopped onion
- 2 cloves garlic, finely chopped
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1 cup chopped mushrooms (I used white mushrooms)
- 1 cup ketchup (and maybe a teeny bit more to taste)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown rice vinegar
- 1/8 teaspoon pepper
- 1 tablespoon brown sugar
- 2 tablespoons prepared mustard
- 1/2 teaspoon ground cloves
- Season with salt (if needed)
- 2 cans Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits (Makes 10 biscuits)
- 1 cup shredded pepper Jack or Cheddar cheese (or more. I say, go crazy with the cheese!)
- Heat oven to 375°F.
- In 10-inch skillet or wok, cook ground beef until browned. (Drain if needed; if you get really lean ground beef, you won’t need to).
- Add onion, mushrooms, garlic and bell pepper over medium-high heat until everything is thoroughly cooked; drain.
- Remove from heat.
- Stir in ketchup, Worcestershire sauce, vinegar, mustard, pepper and brown sugar.
- Season with ground cloves and salt. Mix.
- Separate dough into 10 biscuits; place each biscuit in an un-greased regular-size muffin pan.
- Firmly press dough in bottom and up side of each cup, forming 1/4-inch rim. If desired, brush tops and sides of biscuits with an egg wash before baking. To make the egg wash, beat 1 egg yolk and 1/4 teaspoon water until well blended. (I did not do this.)
- Spoon about 1/3 cup (or more) beef mixture into dough-lined cups.
- Sprinkle each biscuit with 1 tablespoon of shredded cheese.
- Bake for about 17 to 20 minutes or until biscuits are golden brown and cheese is melted.
- I know it’ll be hard, but wait for these to cool completely before removing from your muffin pan.
